We are also mostly gift based and it would be incredibly helpful to have an editable buyer section that's completely separate from the recipient as much of the time they are different people. If it happens to not be a gift and the buyer and recipient are the same, then that could easily be solved by having a simple checkbox that declares that their name and contact info are the same so it would auto-fill.
Online store orders that are imported pre-fill this information correctly and separate the buyer from the recipient, but manual orders are unable to be edited in this way. Would definitely avoid any confusion for shipment and delivery emails!
