What is the correct procedure when we want to cancel the order?
Should we just cancel an order from our Woocommerce store (change status to - Canceled)? Will, it automatically change Shipstation order status to Canceled and it won't be shipped?

If you need an order to be in a cancelled status in both your selling channel and within ShipStation, the best way to handle this would be to cancel the order from within your selling channel. If the order is in an open status within ShipStation then the order will update and reflect the cancelled status when you refresh your selling channel next.
