Reporting Flexibility

I own a single product business and the product has 3 different variations with standard, custom, wholesale. These are differentiated by tags in my orders and I track our inventory based on what is shipped out based on the Ship Date. I'm looking for reporting that includes Product/SKU, Tag, Ship Date. Everything I've been able to generate will be close (order date instead of ship date, missing tag, etc.). Main point being more flexibility on the reporting to where you can include in column available within a particular time frame.
